We used to have the same problem when running a Boss 302 engine in a boat (circle racing). The problem was caused by the oil not being able to drain back down to the pan quick enough with a high volume pump and high revs. I have not heard of this happening with the 351C, but the only way we were able to solve it was fitting 2 large Airquip hoses to each valve cover down externally to the oil pan. I am sure that you wouldn't want to do this, but if the problem is caused by the same thing, I would check out the drain back holes on the driver's side head. Probe to see if they are partially or completely obstructed by the head gasket. Also, are you sure your PVC valve is not stopped up? Although at WOT there isn't any vacuum. Maybe you will have to go to "exhaust" PVC for racing (wouldn't work though if you have to run mufflers).
