Check to see that your fans are getting enough current (amps) to them. If you can turn them on with the engine off, run a seperate ground and a seperate positive (one at a time, then both) to the fans. If doing any of these combos increases fan speed, it may be necessary to rewire the fans with 10 gauge wire. One other thing to check. Try opening your front hood about 3 - 4 inches. You can use block foam for the lift and a tie-wrap to hold the hood down. Drive around and get the car nice and hot in traffic and see if your temp goes up to 230 again. This will tell you if you are getting enough air flow through the radiator. You may need an additional pusher fan in front, or hood vents or bigger vents. Also check and make sure the top, sides and bottom of the radiator are sealed from one side to the other. At idle speeds (stop and go) air can circulate around and around from the rear to the front of the radiator by going around the sides and top. I have many of the same mods as you and fixing these problems helped me.
