Paul, I think your sender might be broken. Last year my sender broke and jumped around similar to what you describe before finally showing zero pressure all the time. Diaphragm inside sender had broken and filled the sender housing with oil. Oil circulation is probably too fast for you to notice uneven oil temperature I think. I've driven my car in sub-32F weather with the pressure gauge working and not seen any fluctuations as you describe them. Oil starvation is usually seen at high rpms, not low. Dipstick length might be incorrect even though it's stock! There's a TSB that says what length it's supposed to have. Safest would probably be to drain all oil, fill with the proper amount and make a new mark where your level ends up.
