I say DO IT.

The 351C was great in 1974, but it is really a dinosoar and suffered from lack of development ever since.  The 351 W will fit fine, but will need new exhaust headers, some accessory bracket changes and a bit of H2O plumbing work.  But then you have a superior block, oodles of aftermarket head availability (even the mighty Brodix has joined the fray), Factory EFI if you like, and taller deck hight for stroker capability.

My next serious engine will be a windsor.

I have been contemplating a new engine for my Pantera, and have been

Some benefits that I can see are:

1) Reduced weight - the Windsor weighs about 90 lbs. less,  and with
aluminum heads about 140 lbs less (I think).

2) The above should help in the handling department .

3) Greater parts availability.

4) Reduced cost - (aluminum heads complete are only about a grand)

5) Keeps the original motor stock and available for reinstallation if
desired

I have several interesting articles on the 351W and the horsepower you can
get from stroking it, using long rods in it etc.  One example is a "mild"
10 to 1
408ci stroker motor cranking out 543 Hp and 527 lbs-ft of torque.

Anyone have any reasons I shouldn't consider this?

What all is required to do this? I know you'd need headers and accessory 
brackets.  What flywheel/clutch combo do you use?  Any other gotchas?

Also - on the stroker motor - I know piston speed was brought up as a
potential
caveat.  How do you calculate this and what is too much?

Anxiously awaiting opinions/ideas...
