Actually, I always use both.  I want the "pan" to keep hot oil off the
intake manifold, but find that the stock gaskets don't work with an
aftermarket manifold.  I have even modified the "pan" by cutting off the
gasket part, and drilling a couple of drain back holes in the lowest portion
since some oil would be bound to be trapped in the pan.  But I still think
the stock set up with aftermarket thicker gaskets worked best.
