Bryan, a qualifying question first: how does your Wilkinson 5-row radiator
work for you right now, with an individual thermostatic switch for each fan?
If the answer is "fine" I advise to not screw with it just yet. Doubling up
the fans to only one thermal switch is betting that the relay can handle twice
the electric load for extended periods. The only thing I might suggest is to
wire one fan to a cockpit toggle switch in parallel with the relay, so you
aren't totally dependent on the thermal switches, as my experience with
thermal switches (Pontiac, Chevy etc) have been poor over time. At least with
one fan on manual, you can hobble around at higher than normal temperature if
things turn to worms...
