When I got my Pantera in 1990, the gauge read way high as determined by the 
calibration technique described below.  Putting a resistor in the line to the 
back of the gauge corrected it.  I can look up what ohm resistor I put in if 
you want me to; but this was a factory fix, so it is in the factory updates 
book. So before you spend any more money, make sure that the gauge is reading 
correctly.  

However, on my car the needle would still start heading toward the red as 
soon as I would start driving slowly or stop.  (I never had the courage to 
stay still and see how high it would go.)  Driving the car at 55 or so would 
cause the temp to promply return to 190.  I diagnosed lack of airflow thru an 
adequate radiator and bought a pair of the Meriah fans from Hall.  This 
solved the problem completely.  (The previous owner had had the radiator 
recored with an upgraded core.
