First, I based the 'unused switch' comment on my sketchy knowlege of a '67 
goose w/289 Hi-po engine, one of 5 semi-prototypes once owned by Larry Stock. At 
least 2 of his dash toggle switches had no wires on them, so I assumed.... 
After all this time with DeTomaso, I shoulda known better.
With the 351-C in Panteras, I found by measuring with an anemometer that the 
stock fans blow about 300 cubic feet per minute (each) toward the radiator 
core. By substituting fans that move about 900 C.F.M each, engine water temps 
stay much closer to the thermostat opening temps in heavy traffic. We also found 
that sucker fans mounted in a shroud (to force air through 100% of the 
rad-core) also helps considerably. On the road above about 25 mph, fans of any type 
are usually not needed. 
Using a relay means the activating switch only conducts current to and from 
the relay's activation coil, usually in the milli-amps range, rather than 
conducting all the current for whatever device the switch is controlling. Pantera 
fans and headlights draw a lot of current and often burn up, especially when 
bigger fans or halogen headlights are added. Use your laser-aimed heat gun on 
the headlight switch with the lights on & see what you get.
Your thermoswitch placement sounds fine; doesn't necessarily have to be in 
the hottest, nor the coldest place- just wherever is convenient. Good luck- J
