There are a few mods that add relays for the radiator cooling fans such as
the Bob Timma fuse block plus relay kit, the Mike Drew article on
PanteraPlace, etc.

My 71 comes with a relay for the automatic fan and another relay for the
manual fan.

I am missing some piece of the mental puzzle here. Why more fan relays?
Are they a replacement or in addition to the stock relays? >>

>>>The added relays aren't for the fans. They are for the HEADLIGHTS. The
stock configuration routes all headlight (lamp) power through the switch, which
sizzles it. The modification routes the actual lamp power through relays,
and the switch is used to energize (turn on) the relays to allow the power to
reach and illuminate the lamps.

The modification articles you're referring to ALSO contain a methodology for
routing 'pure' power to the fans. The stock setup runs the fan current
through a maze of connections and switches, all of which add resistance and cause
the fans themselves to spin more slowly.  The modification adds an aux fusebox;
power comes directly from the battery/alternator to this fusebox, and from
there directly to the fan relays (which are still turned on and off by the stock
thermoswitches), bypassing the ignition switch, stock fusebox, spare tire
inflator, and God knows what else....
