I would agree with Chuck, given your RPM range, that's the way to go. I have a 393 stroker, it has 550hp and 500 lbs. of torque, it's fun for around town and occassional track days.
It will do a mean burnout if you want to do that sorta thing, personally I would never visit 7,500 rpm's on a regular basis unless I just had lots of extra cash around.

These are some of the mods to my engine, still strong and loud!

Balanced & Blueprinted w/ H Beam Rods
Robert Yates Aluminum Cylinder Heads
Titanium Valves & Retainers
Roller Cam & Roller Rockers
Aluminum Heavy Duty Water Pump
Robert Yates Spider Aluminum Intake
Holley 750 cfm Dual Line, Double-Pump Carburetor
Summit Racing Fuel Pressure Guage
DeTomaso K & N Air Filter
DeTomaso Aluminum Valve Covers
Distributor Steel Gear w/ Roller Cam Drive
MSD Electronic Ignition System
Optima Battery
