First, listen to Mr. Dan Jones because he really knows and understands the physics!  Now for my personal opinion, I second Mr. Jones suggestion that you "pick your own parts" since every kit I have seen has had a weak link.
 
  As for displacement that would depend entirely on the maximum RPM range.  At 7500 RPM a well done 377 is the way to go.  On the other hand, those of us who seldom see 5500 RPM the 393 is nice do to the torque curve and the cylinder volume starts to actually make use of the 4V heads flow capacity.  The 408 option makes me a bit weary since you run into the wrist pin/oil ring issue do to rod length that has been known to turn stroker motors into "smoker motors".
 
But then again, what do I know, I'm half-Polish!
