I wouldn't be too hard on yourself about carb jetting, it strikes me that it 
would have had to be extremely rich, black smoke rich, to wash the oil from 
the cylinder wall. I would think that in the extreme, fuel would be found 
in the oil and you would have recognized it in an oil change.

Regardless, it sounds like worn or a spun main bearing(s). While diluted 
oil may have been the culprit, I'd wager my money on
1) detonation, that caused premature rod & main bearing wear
2) a cracked crank that is flexing enough to spin a main bearing,
3) a moment of poor oil pressure due to previous overheating that weakened 
the oil's viscosity allowing crank to bearing contact or
4) a moment when the pickup sucked air vs. the slick stuff that left the 
crank / bearing relationship momentarily unprotected.

I would expect an issue with blow-by would have revealed itself with the 
engine down on power and smoking out the tail pipes; yet I don't see the 
connection to low oil pressure.

Anyway, that is my diagnosis from a distance with the limited knowledge on 
hand prior to the autopsy. Other opinions?
