[DeTomaso] Webbers on a new engine?

The 351C I bought off Ebay has been rebuilt and Di*K has it installed in The Winged Warrior.
A concern has arisen about breaking in the new rings, that the Webers could wash down the cylinders if too much gas flows.
The other option is to run the Holley until the engine is broken in.
Any input?
